Ingredients for Gujarati Handvo
To prepare the perfect Gujarati Handvo, you’ll need the following ingredients:
- 1 cup rice
- 1/2 cup chana dal (split chickpeas)
- 1/4 cup urad dal (split black gram)
- 1/4 cup moong dal (split green gram)
- 1 cup grated bottle gourd (lauki)
- 1/4 cup yogurt
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp sesame seeds
- A pinch of asafoetida
- Salt to taste
- 1 tbsp oil
- 1 tsp fruit salt (eno)
- Fresh coriander leaves for garnish
Preparation of Gujarati Handvo
Step 1: Soak and Grind the Rice and Lentils
- Start by soaking the rice, chana dal, urad dal, and moong dal in water for 6-8 hours or overnight.
- Drain the water and grind the soaked mixture into a slightly coarse batter using minimal water. The batter should be thick, similar to pancake batter.
Step 2: Ferment the Batter
- Add yogurt and salt to the batter and mix well.
- Cover the batter and let it ferment for 6-8 hours, or until you notice bubbles and a slight rise in the batter.
Step 3: Add Vegetables and Spices
- Once the batter is fermented, add grated bottle gourd, turmeric powder, red chili powder, and fresh coriander leaves. Mix everything together.
Step 4: Prepare the Tempering
- Heat oil in a pan and add mustard seeds, cumin seeds, sesame seeds, and asafoetida. Let the seeds crackle.
- Add this tempering to the batter and mix well.
Step 5: Add Fruit Salt
- Just before cooking, add the fruit salt to the batter and gently fold it in. This will make the Handvo fluffy and light.
Step 6: Cook the Handvo
- Heat a non-stick pan or tawa with a little oil.
- Pour a ladleful of batter onto the pan and spread it evenly. Cover and cook on low flame until the bottom turns golden brown and crispy.
- Flip and cook the other side until it’s done.
Alternatively, you can bake the Handvo in a preheated oven at 180°C for about 25-30 minutes until the top is golden brown.
Step 7: Serve and Enjoy
- Once cooked, cut the Handvo into slices and serve hot with chutney or yogurt.
